Raspberry and Lemon Muffins! Light and crumbly, lemon, spring muffins; dotted with sweet raspberries and finished with a tart, lemon buttercream and a sprinkle of lemon zest. This has to be the ultimate spring-time sharing dessert.
As March comes to a close and April begins, its definitely time to welcome in spring and start to look at some lovely spring recipes. With expected warmer weather around the corner (I’m being highly optimistic!) and bright, yellow daffodils popping up all over the place, its time to put away the custard and stodgy puddings and get out the lighter sweet treats. What better way to do that, than with these beautifully, tempting raspberry and lemon muffins. Perfect for filling that little gap at the end of a meal.
Great for sharing and even better for keeping in a tin to use over a few days. Well . . . maybe 2 days max, depending on how strong your will power is and how sweet your sweet-tooth is.
Raspberry and lemon muffins
So easy to make, with a recipe that gives a wonderful rise and finish; which is perfect for a swirl of lemon buttercream on top.
The basis for these little, sponge cups of joy is an easy bun recipe with the addition of a little lemon zest. The raspberries, which were amazingly sweet and perfectly ripe, were added after I’d spooned the mixture into the muffin cases. For that perfect finish I half filled each muffin case, which allowed the mixture to rise just to the top during baking.
Deliciously zesty lemon buttercream
The buttercream, which is only 3 ingredients is really easy to make with the help of a mixer. Butter, icing sugar and lemon juice all go in the mixer, which is set on high for 10 minutes or until a lovely light and creamy buttercream is produced.
So lets get spring off to a flying start with a recipe that I know I’ll be making again and again.
