Date, almond and coconut bites! These little balls of goodness, made with just 5 ingredients, are my best friends at the moment and my answer to banishing those 3.30pm biscuit cravings.
Ever have one of those days where you find yourself staring into your fridge? Or rummaging through the back of your cupboards through mountains of tins? Or just randomly stood in the kitchen hoping for some amazingly delicious, yet completely healthy snack to jump out at you and say: “eat me, I’m the answer to that need for sugar and chocolate right now, plus I’m calorie and fat free!!” I feel this pain most days and always seem to be trying desperately not to eat that chocolate orange or galaxy bar or huge slab of cake that keeps calling my name.
Sometimes willpower takes me so far but inevitably makes the whole thing worse as I eventually end up eating the thing I was trying to avoid, but in a massively huge quantity. Not great guys – no good at all.
However, sometimes the best course of action is to allow myself a small treat as soon as I feel the need for it and sort the issue out right there and then. I’ve always said a low calorie hot chocolate drink is the best way to get around that desperate need to scoff a full tin of celebrations… OK…sometimes actual chocolate is needed and no amount of mint options hot chocolate is going to suppress that. But on those days where I’ve been super good and I just need a little something to make me feel better and reward myself; a little sweet treat goes along way without making me feel guilty or horrendously fat all of a sudden.
Enter: Date, almond and coconut bites.
They are really easy to make, contain plenty of good fats from the almonds and are sweetened naturally from the dates with a dash of syrup. I can’t tell you how great it is to have a few of these on hand when you need a little sweet snack mid-afternoon or to fill that dessert craving just after tea. They can also be finished off with a dusting of matcha powder for that extra kick of antioxidants, or a dusting of cacao powder to satisfy that need for chocolate. They are, in my opinion; AMAZING!! And look pretty great as well.
This said; I’m not complete against a full on, completely indulgent dessert (sometimes it’s necessary).

Date, Almond and Coconut Bites
Ingredients
- 250 g pitted dates
- 30 g dessicated coconut
- 30 g ground almonds
- 1 tsp vanilla extract
- 1 dessert spoon golden syrup
Instructions
- Place the dates in a blender and blitz for a couple of minutes. Place dates into a bowl and add all other ingredients. Mix together well; the stickyness from the blitzed dates and syrup will help the mixture to combine.
- Ensure all the ingredients are spread evenly throughout the mixture.
- Next begin to create balls from the mixture. Take a small amount and shape using your palms.
- Place each ball on a tray to firm up. Finish each ball with a dusting of cacao powder or matcha powder. Chill if desired and eat as you please 🙂
