Thai style dressing that is really easy to make. Its bright green colour and zinging flavours can liven up any dish instantly.
Thai style dressing

Thai style salad
I love a refreshing Thai salad with plenty of mango and papaya and this dressing is great as a topping or to serve on the side. If I'm serving up a spicy dish its great to have a mango salad alongside to help cool things down if necessary 🙂
Thai green curry
When I want my Thai dressing to be the star of the show I'll make a Thai green curry with Homemade Thai green paste. Very much like this Thai dressing the Thai green paste can be put together in a few minute by adding all the ingredients to a blender and blitzing until smooth.
Both the Thai dressing and the Thai paste will keep well in the fridge for up to a week or in the freezer for 3 months. Defrost thoroughly before using.
Thai style dressing
Ingredients
- 3 tablespoons of olive oil
- 2 cm piece of ginger finely chopped
- ½ juice of a lemon
- Half a red chilli finely chopped
- Handful of coriander roughly chopped including stems
- 2 Kaffir lime leaves
Instructions
To make the Thai dressing:
- Use a small blender to blitz together the oil, ginger, lemon juice, chilli, coriander and kaffir lime leaves. If dressing appears too clumpy add more oil and blitz again until desired consistency is reached. And thats the dressing done. So quick and easy :-).
