Date, Almond and Coconut Bites
Date, almond and coconut bites! These little balls of goodness, made with just 5 ingredients, are my best friends at the moment and my answer to banishing those 3.30pm biscuit cravings.

- 250 g pitted dates
- 30 g dessicated coconut
- 30 g ground almonds
- 1 tsp vanilla extract
- 1 dessert spoon golden syrup
Place the dates in a blender and blitz for a couple of minutes. Place dates into a bowl and add all other ingredients. Mix together well; the stickyness from the blitzed dates and syrup will help the mixture to combine.
Ensure all the ingredients are spread evenly throughout the mixture.
Next begin to create balls from the mixture. Take a small amount and shape using your palms.
Place each ball on a tray to firm up. Finish each ball with a dusting of cacao powder or matcha powder. Chill if desired and eat as you please :-)
