Date, Almond and Coconut Bites

Date, almond and coconut bites! These little balls of goodness, made with just 5 ingredients, are my best friends at the moment and my answer to banishing those 3.30pm biscuit cravings.

  • 250 g pitted dates
  • 30 g dessicated coconut
  • 30 g ground almonds
  • 1 tsp vanilla extract
  • 1 dessert spoon golden syrup


  • Place the dates in a blender and blitz for a couple of minutes. Place dates into a bowl and add all other ingredients. Mix together well; the stickyness from the blitzed dates and syrup will help the mixture to combine.
  • Ensure all the ingredients are spread evenly throughout the mixture.
  • Next begin to create balls from the mixture. Take a small amount and shape using your palms.
  • Place each ball on a tray to firm up. Finish each ball with a dusting of cacao powder or matcha powder. Chill if desired and eat as you please :-)
