Carefully position your knife length ways along the avocado. Then cut down the middle into the avocado until the knife reaches the stone. Move the knife around the stone so scoring all around the fruit.
Remove the knife then twist the avocado with your hands and one half will neatly come away from the stone
To remove the stone from the other half carefully line up the blade of the knife with the stone. Tap the blade into the stone and twist. The stone should come away with the knife. Gently tap the stone on a hard surface to dislodge from the knife.
Next carefully score the avocado flesh into cubes with a knife, whilst its still in the skin. Then use a spoon to scoop the flesh out. The flesh will fall out of the skin as chopped cubes
To stop the flesh from going brown squeeze over lime juice immediately and toss well to fully coat.
