A refreshing mango salsa recipe, great served on its own or loaded on tortilla chips. Made with chunks of avocado, fiery red chilli and a good handful of fresh coriander. A perfect Caribbean starter or side dish and especially great with anything spicy.

Finely dice the red onion and mix in a large bowl with the juice of one lime.
1 red onion, 2 limes
Add finely chopped chilli and diced mango and avocado to the red onion. Add the juice of a second lime and toss everything together well.
2 mangoes, 1 avocado, 1 chilli, 2 limes
Season with salt and pepper (to taste).

Garnish with freshly chopped coriander.

Limes: Lime juice is essential in the recipe for keeping everything fresh and vibrant. The acidic lime prevents oxidation and browning of the chopped avocado. If you can't get hold of limes you can also use lemon juice.Avocados and mangos: Use ripe avocados and mangos that feel soft but not squishy.
